I have a user who is having one of our applications misbehave with his printers.  This paticular app has always been one that doesnt play well with printers, but its really causing him trouble.

I think I could fix it by assigning a Citrix policy to him that allows ONLY the windows default printer to map.

But he also has access to another app in our farm and he needs multiple printers for that app.

Since I only want to restrict HIM to windows default printer and only for that app can I do that through citrix policies?

The apps are each load balanced across 8 to 10 servers, but they do not Share any servers.

I am afraid I can't assign a policy that will only touch him and only on that app but thought Id check the wisdom out here first.

you could try publishing a second instance of that application just to that user on one server (or all), create another policy and apply it to only that server (or all), apply it to that user and allow, add all other groups and deny.

I was wondering about doing it that way.  Creating a policy, applying it to the servers for that app, and then denying access to everyone but him.

It just seems a little cumbersome, but may be what works.

I just worry if I have to do that more than a time or two when I start having these one-off errors pretty soon my policies might become an unmanageable mess.

I have does this before in an environment where it worked very well.  It can get confusing if you have a lot of Citrix Policies.  It might be best to just keep that one user on one server for that App to start out and see how it goes for you.  Good luck.
