Guy Teverovsky created a nice GUI for the 'lazy admins' who want to run Windows Server 2008 Server Core without spending time with the command-line parameters.
So he created a GUI for the GUI-less Windows Server 2008 platform ;-)

The basic configuration utility for Windows Server 2008 Server Core presents the basic WS08 configuration options in a very easy way.

Usefull for running Hyper-V running on Server Core, the tool can be downloaded: http://blogs.microsoft.co.il/files/folders/guyt/entry68860.aspx
