I have also implemented 2 Xen5 Servers in my Dev farm and built 2 Xenapp 4.5 VMs also published some core apps (Out look and Office2003)off of it and so far everything looks fine . I am using local storage and planning to attach it to fiber once I am comfortable with it.  Lets see what happens . It is really easy to install, They don't call it  ( Xen in Ten)  for no reason. It literally takes 10 minutes to install the Xen piece and it is really easy.
